Now that the holidays are upon us, I wanted to share a quick and easy recipe of Roasted Rosemary Marcona Almonds that we enjoy year-round. I must give credit to one of my besties, Heidi, for the inspiration for this recipe. She served these at one of her many gatherings and I fell in love and have been making them ever since!

We are similar in that we don’t use recipes very often. We both enjoy just throwing things together off the hip, or “to taste”, so to speak. Since I think these are such a treat, I just made a batch and kept track of what I used to create this recipe for you.
Roasted Rosemary Marcona Almonds
Not only are these perfect to serve alone to your guests, but they are also great to use on a charcuterie board or to serve along with a few other appetizers such as cheese, olives, or a nice glass of wine.

I love the buttery, sweet flavor of Marcona almonds and I like to saute them to give them a bolder flavor. I prefer to cook them on medium to high heat for quick browning.

For this recipe, I used my House Seasoning but you can easily just use any type of salt you like. You can find the recipe HERE.


Roasted Rosemary Marcona Almonds
This easy and tasty appetizer takes only minutes to make and they disappear just as quickly!
Ingredients
- 2 Cups Marcona Almonds
- 3 Tbsp Olive Oil
- 3 Tbsp Fresh Rosemary chopped
- Holiday's House Seasoning (or Sea Salt & Pepper) to taste
Instructions

Heat oil in a heavy skillet on medium-high heat.

Saute almonds until they turn light brown.

Add in chopped rosemary as they are cooking.

Remove from heat and let cool for 30 minutes.

Add Holiday's House Seasoning or Sea Salt to taste and serve.

Are you starting with raw Marcona almonds? When I tried to find Marcona almonds online (I live in Germany, so no Costco!), I was faced with many choices – unblanchend/blanched, raw, lightly roasted, etc. I assume from the photos that you are using blanched almonds, but could you confirm? Thanks! I’m looking forward to trying this recipe!

I use raw almonds. I am not sure if they are blanched or unblanched. I assume that they are blanched because the skin is removed. I am so sorry that I missed your comment/question. Good luck! They are delicious!! XO
