Not only are we in the midst of our hot summer nights here but also the bustling berry season. Sipping on a refreshing cocktail is a perfect way to end the day! Along with a few of my favorite bloggers, we are sharing some of our Favorite Berry Recipes for the season in this blog hop. Today, I am sharing my Raspberry Vodka Spritzer with Mint (from my own garden!) and Lime.

Of all of the berry variations, raspberries are my favorite! I love creating cocktails with them (or really anything with vodka!!).
How to make this Raspberry Vodka Spritzer with Mint and Lime
You will be delighted to see how easy this recipe is! It features very basic ingredients that can also be easily substituted…vodka, lime juice, simple syrup, sparkling mineral water, raspberries, and fresh mint.

Tito’s is my normal go-to vodka. However, for this recipe, I tried a new organic vodka provided to me for review and I loved it. Grainger’s Deluxe Organic Vodka checked all of the boxes. It is made from corn (so it is gluten-free!) and is an American-made product that I love supporting!
If you would prefer a non-alcoholic option, just eliminate the vodka! It will still be super yummy and refreshing!
Also, club soda is a more typical ingredient for a spritzer, but I prefer to use sparkling mineral water for the healthier aspects it provides.
To create this cocktail, I start by adding the fresh mint, simple syrup, and sparkling water (quantities list below in the recipe). You can easily make your own simple syrup from scratch by boiling 1 part water with 1 part sugar and then let cool.

Next, fill your glasses (I am using my favorite Lenox Trianna Beverage Glasses!) with fresh raspberries and then muddle with the back of a spoon.



Once you muddle the fresh raspberries, simple pour the cocktail mixture over the raspberries and add ice.

After you add the ice, garnish the cocktail with a slice of lime, a sprig of fresh mint, and then top with a few fresh raspberries. Easy peasy!!

Getting a whiff of the fresh mint is what really makes this cocktail special! The lime will add a bit more tartness, if desired.

You could absolutely make this with blackberries as well. I prefer raspberries, though, because the seeds are a bit smaller.

This particular recipe serves four but it can easily be made in larger batches. The vibrant color this cocktail offers is another reason it is perfect for entertaining!

Raspberry Vodka Spritzer with Mint
This simple and refreshing cocktail is perfect for any hot summer evening or event!
Ingredients
- 3/4 cup Vodka
- 1/4 cup Fresh Lime Juice about 2 limes
- 2 cups Sparkling Mineral Water or club soda
- 3 tbsp Simple Syrup or 1 part sugar/1 part water boiled and cooled
- 1 pkg Fresh Raspberries preferably organic
- 4 sprigs Fresh Mint
- 4 wedges Fresh Lime Slices for Garnish
Instructions

In a glass carafe or decanter, mix vodka, fresh lime juice and sparkling mineral water.

Add 1/4 cup of fresh raspberries to each glass (4 total) and muddle with the back of a spoon.

Pour in 3/4 cup of the cocktail mixture to each glass.

Add ice.

Garnish with a fresh lime wedge, a sprig of mint, and a couple of fresh raspberries.
