Since I started sharing some of my recipes with you, I have started with some of my basics and go-to’s and will be building from there. Today, I am sharing my simple Arugula Salad with Lemon Vinaigrette Dressing that I serve with so many dishes!

To create this simple Arugula Salad with Lemon Vinaigrette Dressing, all you need is arugula, my Lemon Vinaigrette Dressing, freshly shaved parmesan, and cracked pepper.
As you may remember, I shared my Lemon Vinaigrette Dressing recipe a few weeks ago. It is such an easy dressing to make and I use it for a variety of things. I use it on all kinds of salads, as a marinade, and as a base for other sauces.

It is an absolute staple in our refrigerator! It stays fresh for a couple of weeks so I make it in bigger batches when I am cooking more often (as we certainly are these days!).

Arugula Salad with Lemon Vinaigrette Dressing
Arugula has been one of my favorite ingredients to use for salads or as a final fresh ingredient to top off pizzas, flatbreads, seafood recipes, etc. The peppery flavor is such a great compliment for savory dishes.

The simplicity and freshness of this salad is part of what makes it such a go-to. I always keep the ingredients “in stock” in my frig so I can whip it up on short notice and in no time.


Arugula Salad with Lemon Vinaigrette Dressing
A simple and delicious salad that compliments so many recipes!
Ingredients
- 6-8 oz Arugula 1 medium bag
- 1/3 cup Lemon Vinaigrette Dressing (see below) use less or more to taste
- 1/2 cup Shaved Parmesean fresh is best!
- 1/2 tsp Fresh Cracked Pepper or to taste
Instructions

Place the arugula in a mixing bowl.

Add dressing and toss.

Place salad in a serving bowl or tray.

Top the salad with the shaved parmesan.

Crack fresh black pepper on top.

PRO TIP: One of the reasons that I typically use a tray rather than a bowl to present and serve salads is because you can spread the toppers more evenly over the salad for the perfect bite!

Lemon Vinaigrette Dressing Recipe
This simple and tart Lemon Vinaigrette Dressing Recipe is perfect for so many uses. It is perfect as simple salad dressing, a marinade or a base for a lemon sauce!
Ingredients
- 1/2 cup Extra Virgin Olive Oil only the good stuff!
- 1 Juice of one Lemon add some zest if you like!
- 2 tbsp Dijon Mustard I used Grey Poupon.
- 1/2 tsp Holliday's House Seasoning Recipe linked in this post!
Instructions

Add olive oil to an airtight container.

Add lemon juice, dijon mustard, and house seasoning to container.

Seal the container and shake vigorously.

Refrigerate for 10 days to 2 weeks.
