This is a very healthy, vegan and fresh appetizer for any gathering. It would also be a great topping for grilled fish or chicken!
Preheat oven to 350 degrees.
Mix 2 tablespoons of olive oil with 2 cloves of minced garlic. Set aside.
Slice a French baguette into 1/2 slices on the diagonal.
Bake for 15 minutes or until golden brown and crispy.
Once cooled, brush the baked bread with the garlic-infused olive oil.
Slice Roma tomatoes in half and press out the juices and seeds and discard.
Finely chop tomatoes and onions and add to a mixing bowl.
Mince 3 cloves of garlic and add to bowl.
Add the remaining ingredients and stir.
Served immediately with prepared bruschetta.
This can be prepared ahead and stored in the refrigerator. If stored for longer than an hour, refresh the tomato mixture with a dash or two of red wine vinegar.
