Cucumber and Mint Infused Vodka Cocktail

This refreshing Cucumber and Mint Infused Vodka Cocktail is perfect to serve your guests or just enjoy yourself!

  • 1 large Seedless English Cucumber peeled and thinly sliced
  • 1/2 cup Fresh Mint pinched off
  • 1 750 mil Bottle of Vodka approximately 3 cups
  • 1 tsp Simple Syrup I use Rosie's or you can make it yourself
  • 2 wedges Lime
  • 1 splash Club Soda or Sparkling water to taste


  1. Peel and slice the cucumber and place into a mason jar or other air-tight glass container.

  2. Add fresh pinched mint.

  3. Pour in vodka, seal, and shake vigorously.

  4. Place in a dark cabinet for 3 - 5 days (shaking once or twice a day) to infuse the flavors.

  5. Once the vodka is infused, strain it, discard cucumbers and mint, and pour back into the jar for storage.

  6. For the cocktail, pour two ounces over ice into a serving glass.

  7. Add simple syrup, a splash of club soda or sparkling water.

  8. Top off cocktail with a fresh squeeze of lime.

  9. Garnish with a slice of cucumber and fresh mint.

  10. Enjoy!!

Recipe Notes

Even though the recipe states that it takes 3-5 days to make this cocktail, that is only to allow time for the flavors to infuse the vodka so don't let that scare you. To make the actual cocktail itself only takes minutes. Since this recipe makes about 3 cups of the infused vodka, making the cocktail in the future will take only minutes because you have already knocked out the first step!
